well, butchery was a skill in the past.. where butchers do the work well...
these days, in feedlots and abbatoirs, they dumb down the work, so they get mostly illegal immigrants to work.. it's dangerous work...
and mostly, cow stomaches, when not properly cut, will explode (methane buildup because of fermentation of cellulose) from the pressure.. spraying the carcasses with faeces...
the assembly line type of slaughterhouses will not stop to clean up the meat.. and the meat, if it's destined to be made into burgers, will not be cleaned and just thrown into the grinder...
it's been witnessed, documented and the meat packers don't deny it...

btw, since you are in the US, be aware that you are eating a lot of steroids.. US Beef is banned in many countries (including Singapore) for having excessive amounts of steroids in them, rendering the beef unfit for human consumption in many countries.. we get our beef from S. from a seminar tat i attended, the lecturer said tat: do u know? u cld leave e buger in e open for two weeks, and e beef wont decompose? ==> tatz how much preservertives it contains... 
so...a huge letdown to all doublecheese buger n big mac fans! -
