I think basically is because they've ran out of places to protest at. The Shin Corp transaction is a legal binding one which is binded by legal means. The protestor thought that majority means power and that they can force the deal to be dropped and thus the targetting at Singapore Embassy. However, I think it will soon be over as the Thai King is getting displeased with the protestor.

threats of war, car-jackings, cut water supply, robberies, corrupted traffic police etc never stopped Singaporeans going over the causeway to play too .... -

Thailand's history has always been full of coup detats and takeovers since WW2 when someone is not pleased with the leading person in power. It's almost a never-ending cycle.
