The chefs come up with very artistics design of the sugar pieces and chocolate pieces. And sometimes after all the hard work, while transporting their pieces for judging, the thing breaks. But these chefs are very good. I've seen them repair their stuff. But not all can be repaired.
You can check out the website on Pastry Chef Competition. There was one year, I think 2004, the South Koreans won the Sugar section with their creation of dragaon. Very impressive.
Oh, I love to watch the Food Network.
