Let me put it this way:
No one is asking you to do all sorts of funny things when being considerate to others. All that we're asking for is for simple things like not asking us out for lunch if you already know that we're fasting.
If you forget that I'm fasting and ask me out to lunch, I can still understand that you're just trying to be friendly. But if you already know that I'm fasting and still ask me out to lunch just to spite me, then I say you're not being considerate at all.
It's just like the analogy of the vegetarian Buddhist that you used. It would only be expected of me to respect his beliefs and his decision to not eat meat. So I show consideration for him by not asking him to eat meat. If a vegetarian asks me not to invite him to eat meat (and that has happened before), I'll respect his request.
Whether I fast or not is my own business, but the least you can do is show a bit of consideration for my own business.
