We had 2 shatec students which was with us and the chef decided to put one under me in my department. Well, from what i was told he got really good grades in school. YEAH ! SURE !
1st day working with him, i asked him to make mayo by hand. I'm very sure thats one of the very 1st things they teach you in school. Nope, whatever he made wasn't mayo. Asked him whether he knew how to bake, "YES I DO!". Gave him the recipe, for some reasons the bread couldn't rise.
I gave him another chance. One week passed and still no improvement. He knew nothing much besides the very basic stuff. I got pissed and tried getting him out of my station. Somehow, the chef knew and he got rid of the both of em !
I don't know what Shatec teaches in the culinary course but it is not up to my standard for sure.

I know of many gd chefs that were once from Shatec. That was some many years ago since they grad. Today, most new and young chefs just want to follow in the footsteps of Jamie Oliver thinking it's cool and makes $$$ for you !Originally posted by Patrik:Icic..
