depends on how u going to plan the agenda for tt 1 day
if it's going to be fufilling and exciting, then stay
if u are going to be cooped up in the hotel or be stranded somewhere, then get ur ass back early before it freezes in SH -
no concrete plan for that 1 day

I will spend one more day in Shanghai, regardless of whether I have anything to do or not...
You don't always get the chance to take leave and go on a holiday. Since you're there already, might as well spend one more day if you can. Walk around, visit a museum or a bookstore, or if you don't feel like walking around, just sit around in your hotel room and watch the Shanghainese world go by... read a book in a cafe or something, feel as if you live there!
Maybe you have to spend on one more night's accomodation, but anyway you're going to save $120 by catching the Monday flight. -

shopping at nan jing lu or nan jing bu xing jie
go to the bund + huang pu jiang cruise
go to cheng huang miao
go to the 7 story-high book shop
go to xin tian di
go to zhu1 jia1 jiao3 - 2.5 hrs bus ride away from shanghai, it's a shui3 xiang1 (water village)
maybe also xi tang (also a shui xiang) - this is where mission impossible II is filmed
