the other day i go my
amah house during CNY n then she cook fried rice, very rice wor! so i
ask her how she cook one n she tell me, n she also said dont tell
anyone coz its her secret recipe.
my amah will cook this special CNY fried rice once every year during CNY.
ingredients r
dried scallops
dried mushrooms
1 can abalone
wax sausages
bak kwa
shrimps or diced prawns
egg
spring onions
iceberg lettuce (not chinese lettuce)
garlic
pepper
soy sauce, dark sauce, oyster/abalone sauce, sweet sauce, msg
ok first of all u have to soak the dried scallops n mushrooms overnight
or half a day so it will soften up. after that DO NOT throw the water
away, coz u need it to cook rice.
ok after the scallops n mushrooms had enough of soaking, take the water
n pour it into the rice cooker. then open a can of abalone n pour some
of the salty water into the rice cooker as well. Add in rice n cook
rice as per normal.
After the rice is cook u will have to take the rice out n put on a big
bowl or plate n leave it in open air for it to dry up a bit, about 2
hours. So that when u cook the fried rice it wont be soggy.
ok now u prepare the ingredients. u break up the dried scallops into
pieces n dice the mushrooms. cut wax sausages diagonally. dice the bak
kwa n abalone too.
after everything including the rice is ready...heat up little bit of
oil in a wok, throw in minced garlic, n then add in the wax sausages n
bak kwa. u dont put so much cooking oil in the beginning coz the wax
sausages gonna leak out fats. then add in the shrimps, mushrooms, n
dried scallops. then add the rice. then u dig a hole in the pile of
rice n pour in the egg, n cook the egg in the centre.
after the egg is semi cooked, u can continue stirring. now add in soy
sauce, dark sauce, oyster or abalone sauce, a bit of sweet sauce n
pepper.
then add in the spring onions n finally, after u off the fire, add in
diced abalone. the reason u add diced abalone last is because if u add
too early, the heat will overcook the abalone n make the texture
rubbery.
finally, after u serve the fried rice on a plate, garnish with shredded lettuce.
