Here it goes...
Human, when died, alot goes to hell as punishment for their sins. They, as sprits of hell, are undead. They are hungry but they cannot eat due to their throat opennings are very very small. Even if they want to swallow their saliva, the liquid cannot go through and there is a burning sensation on their throat. So, they are suffering down there. Hungry, cannot eat, cannot die also.
The hell guards, inorder to provoke them, hit their bowls with chopsticks. The hitting sound reminds them of food. Hence, it was a psychology torture that they are reminded of food when they are very hungry but still cannot eat.
The only day they were released, were this Hungry Ghost Festival where their throat opens up, and they are very hungry since it has been a year that they last ate.
So, hitting bowls with chopsticks or utensils, apart from poor table manners, its actually being rude and provoking to the ghost.
Additionally...
My friend who heard from his friend with 3rd eye, said that, during hungry ghost festival, while people doing offerings at anywhere, the ghost is actually watching at that person. The scene is totally the same as �鬼10. And the ghost's saliva will drool onto the food. So my friend never eat those food that had been offered to the deities.
Did you eat food that had once prayed before?

Supposingly yes.
Cross roads are known to have more ghosts lurking around than your average places, and using your chopsticks to hit the bowls will 'lure' them over to you.

Actually, do we consider our deceased ancestors as hungry ghosts?
Those spirits that have no offerings from their own living relatives and families and are wondering around are considered hungry ghosts?

It depends. Hungry ghosts are those who sin too heavily in life, and are punished by having small throats which doesn't allow them to consume or drink anything.
Hence, our ancestors could be hungry ghost if they do too much bad in their life-time.
Ghosts which wander about are called wandering ghosts. They still can eat the occasional offerings made in their area of wandering.

Cos i relate this to alot of people and seems like not much people heard of this before.

Dunno leh. These kind of things hard to say one. Different religion got different theories.
My indian colleague told me that anyone who died before reaching 56yrs old, will die a wondering ghost. Regardless if they got families offerings or not. If the ghost grow old beyond 56yrs old, then they will be sent into another dimension? Heaven or hell?

Most modern people do not really care.
I know about all this because I come from a very traditional family, and my mother often tell me about all the supernatural things and what not to do according to it.
