The problem you're facing is not uncommon, it happened to me to several guys in the past before, but I've found a way to solve it.
You should go out with other friends on a date.
The more the merrier.
Say 4 or five? But not in 3's.
More people will increase the scope of conversation and keep the date lively.
Less effort is needed on your part and
everyone will enjoy themselves on a common activity like, swimming or rollerblading or trip to a nice restaurant for a nice get together dinner, perhaps? -

Bring her watch movie lor, just enjoy being in the presence of some1 u love
and doing something together.
Movie allows moments of silence, afterwhich u can talk about the movie or plan out the next move where to go so on and so forth, use that movie time to think and strategise mah.

talking with gf/bf should be natural. don't force it, or feel obliged to "talk" or "act" in a certain way or a certain amount - you can't keep it up forever. and remember, actions are always more important than words.
