Do you know that vegetables are also carbohydrates and fibre with lots of vitamins and minerals.
Some vegetables like potato ia mainly carbohydrates while the leafy ones and celery is very low carb, high fibre. I take the GI factor into consideration too. I try to eat low GI food which increases my metabolic rate and allows me to walk (long walks) every morning without feeling fatigue. My vegetables and low fat protein give me plenty of energy and good health.
This is nothing new. Many people who have high metabolic rate eat a lot but don't gain weight. Why? Because they are eating the right type of food for their lifestyle.
