Walk until tired and decided to buy a home. Seriously, I guess the decision comes naturally because you are comfortable with the other person and wants to spend the rest of your life with her. Finance is always a tricky issue. As long as both parties has similar goals and aspirations, then things should work out fine. If, however, one wishes to be a tai-tai all her life and the man cannot afford that lifestyle, then this union is heading for disaster.
Actually one of the biggest problem comes from in-laws (and sometimes siblings) from both sides, each wanting to impose their views and unrealistic expectations to the couple. This part quite siong! Just one witness from each side will suffice. Usually the father, sometimes mother, or without them, will be the oldest surviving close relative. Witness gotta sign the cert. Other hanger-ons in ROM not too important, just take up space only. -

In-laws and parents, can be the best of your allies or the worst of your enemies. I am rather fortunately that most of my family members know that I am extremely outspoken and I give regards more to reasons than to relationship. Many times, a man has to stand his grounds in face of the opposition from your parents. It might be helpful too, if you have siblings or senior relatives who can become your allies. Knowing why your mom dislike you gf helps too. Your gf has to try her best to win your mom's approval. However, all else falls, love for your gf should persevere. Afterall this is suppose to be the one that will walk you to your twilight. Parents ain't going to be around forever.... and they get unreasonable at times.
