In business, every good businessman will look at turnovers and profit margin. Can't really expect them to just stay in their little family run shop and expect long term success? The trick in franchising is to maintain the standard. That is something very few food joints have managed. Did anyone know that Wee Nam Kee tried to frachise their brand of chick rice about 2 years back? They opened a branch along thomson road. But the marketing strategy was really bad and it closed down in less than 4 months.
Loy Kee Best chicken rice Is horrible; despite it surviving in jurong point food court all these years coupled by my 4-year stay in that area, I have NEVER eaten at that stall.
To add to this thread of the 'overrated', I would say the [b]nasi lemak at changi village qualifies. No idea what the queue is all about.[/b]

as a consumer, i [b]dont care what franchise, what overheads a company has. thats the company's business and not mine to care. if the food is good, portion and price is reasonable, i will pay and go the miles to get it.
just like macdonalds, i pay $2 for their muffin burger breakfast, i get to ask for free sky juice, sit in comfortable air-conditioned place for hours and not get chase out, ask for as many chilli and pepper satchets to go with my food without staff staring at me. all these i valued them as customer satisfaction which is hard to earn, such satisfaction leads to loyalty and familiarity. this builds long term business and relationship with me.
franchise may be the way for a company to grow fast at a short time. but at the expense of customer satisfaction, I WILL NEVER GO BACK AGAIN!!! its easy to say " maintain standard" but different cook even if its the same menu and same ingredient, still will taste different." such, i will never go back again too. i dont know which is the actual one and which are the franchisee. all carry the same name. just like boon tong kee chicken rice, shihlin taiwan street snacks, bedok 81 bak chok mee, katong laksa and more...
unlike subway, the one in singapore expands very slowly. back 8 years ago, theres only 1 branch in singapore!!! now its everywhere, even 4 shops in town. they are all franchisee oulets. but they do ensure standard. explains the slow expansion. selection of right candidates take time.
