  I find it a bit ironic that Hainanese Chicken Rice should be considered as our national dish, though.

  Yeah u would be surprised that my clients from Hainan love the hainanese chicken rice here more that what they had in hainan. Basically because we adapted their version...it is not entirely similar to theirs and they like the adaptation...on that count, we can proud. In terms of food, we dun lose to foreigners... our local chefs like Eric Teo, Pung Lu Tin etc are all local chefs and enjoy international recognition.
