Singapore, August 7, 2009 - Hainanese chicken rice is steamed white chicken served cold on warm white rice with a light soy sauce, sesame oil, and garlic-chilli dip, accompanied by a broth of chicken stock.
The original Hainanese chicken rice was served with ground green chilli dip.
Over time, lime was added to the chilli sauce.
Singapore chefs also use only chicken stock unlike the Hainanese, who use both pork and chicken.
Pre-fried in chicken fat and cooked in chicken broth, the rice has a rich flavour.
The dish is said to have benn established in Middle Road, Purvis Street and Koek Road more than 60 years ago.

The Bugis St Chuen Chuen Chicken Rice was reputedly the first to add beansprouts and crystal chicken feet as sides to Hainanese chicken rice.
Now,30 years later, they are still as popular as the main dish.
Its trademark? Hot, zesty homemadegarlic-chilli sauce.

never heard of these. the wee nam kee one at novena aint nice at all. wonder why so many ppl go there.
