i would say Cowboy Bebop was the best i've ever watched...
Samurai Champloo is pretty good too...
so is Noir.. -

Howl's moving castle is nice .. watched in the cinema .. it tells you that you should not be prejudice against people ... and not judge people by their looks .

school rumble - slapstick comedy. known as azumanga daioh with guys.
new series that just started showing.
sousei no aquarion - robots and greek mythology! woohoo!
eureka7 - surf boards and more robots! woo woo!
speed grapher - an extremely dark, adult story about politics, economics. good stuff.
transformers galaxy force - it's transformers, what else you need to know? the english dub is called transformers energon, but they usually have sucky voice acting, and are several episodes behind.
futakoi alternative - comedy

zoids genesis - zoids!!!

ultraman nexus, ending soon, to be followed by ultraman max
mahou sentai magiranger
engine - racing drama featuring kimura takuya
h2 - baseball drama based on manga, very nice music and sports drama, emotional.
