Why do char kway teow hawkers only throw in half the egg?

I ordered a plate of char Kway teow for lunch this afternoon. While I was waiting for my order to be ready, I happened to be observing the hawker. From the way he knocked the eggs into the wok, I saw that only 1/2 of the contents went inside the wok and the remaining being dump away. What a waste of food!

next time tell uncle you break his egg for him...

I think its because that way is faster and looks good. too much egg white will diao dia very hard to scrub egg white off lah

maybe he did not even notice it himself...so u hav to pick up the eggshell and show it to tat uncle

Its very obvious. I was watching him while he was cooking. He just cracked it with one hand emptied the yolk and dump the rest. Increase what cost? He will only include 2 eggs per $3 plate. Why should he include a third?

actually i think the whole egg came up just that he only use one hand. i also can do that, courtesy of being a cripple for a few months -
