Why do char kway teow hawkers only throw in half the egg?

normally they cook by batch
so 1 wok cooks maybe 3 plates ... and normally they use 3 eggs -
i tink they use half the egg cos they only need half the egg lahz...
u only see tiny bit egg shreds wad...not one whole lump of egg yolk and white...

maybe char kway teow is supposed to be cook using only egg yolk ? and that is a fast way of removing as much whte as possible ?

The Kway Teow was already prepared. Now they are just adding the leow and warm up the food... Very fast food sek already -
