But i think the PS3 nVIDIA GPU will win over ATi GPU
Coz the current nVIDIA Graphic Card, GeForce 7800 GT has a very good performance, so i think the PS3 should have GPU of comparable quality.
Also, i prefer nVIDIA (sorry that im might be bias) -

And why not use AMD's processors? I thought the are better in gaming - what the consoles does most.

No, not for this year's. Probably the next Xbox, but PS4 won't have DualCore when they are still using iMac's CPU.
The current processers used are 32-bit.
