"scientific equipment" - a laser gun or cloaking device or maybe just a plain lightsaber (preferably red).
"musical instruments" - like a M-16? Ah, the sound of a M-16... music to my ears... otherwise, the "hum" of a lightsaber will do.
"sports outfits and materials" - body armour and tatical gear, camoflague fatigues, nunchukas, sporty knives that can be useful against the guards.
"cultural activities" - foot massages, cheerleader squads, raves.

I do agree it's a difficult to fight according to Geneva Convention nowadays in wars. But personally, POW are also humans. They are fighting as told by their Country and they've not much choice but to fight the war.
