There's no point fabricating lies, telling them it's the sabbatical phrase of your life and you're going to Tibet to learn what life is.
The ex boss might just happen to see you in your new company in the near future and that would really kill your credibility as a person and close some doors for you.
And the plus point, the GM might even offer a higher pay to retain you.

Tender ur resignation few months earlier before u leave, depending on the company policy.
