Classic carbonara doesn't have any cream in its ingredients, only egg. Also no garlic, or onions or herb!!!
Cook pasta in salt water.
Cook bacon (or if you can find it, pancetta, which is an unsmoked italian bacon) in a frying pan in olive oil or butter.
Crack an egg and add freshly ground black pepper to it. Beat mixture. One egg for about one large handful of pasta.
Drain pasta and reserve some cooking water, just in case your end product is too dry. Do not rinse, if you do so sauce will not stick well to pasta. Do NOT wash the pan!!!!
Return pasta to the pot in which u cooked it. Put egg into the pot and stir. Let the heat of the pot and the pasta cook the egg. If you're squeamish, you may turn stove to the lowest heat, but try not to get an omelette. You want a smooth texture, kinda like cream.
Grate parmesan (parmigiano reggiano) and/or pecorino romano cheese over the pasta, the stir again. You may add salt/pepper to taste.
The egg should look as if it disappeared into the noodles, not become a pool of water at the base of the pot. If the noodles are too sticky or dry, add the reserved cooking water. You may also dump the cooking oil into the mix for more flavor, unhealthy, but delicious.
Wait 3 minutes, then serve. Pass the cheese and pepper!
A VERY easy dish to cook, perfect for when you're lazy.
